Really good! I forgot the sour cream but I had some small curd cottage cheese so I put it through a small hand grinder and it worked!! Delicious!

Huge hit at my holiday party. I agree with what others have mentioned: requires some time but very little effort; took longer than 20 min. to caramelize the onions. Will definitely make again and again.

This recipe has my top three criteria for a repeater: tastes great, easy to make and has no expensive/hard to find/have to buy a big jar for 1 tsp. ingredients. I have made it for my wine club and others with discerning tastes and it is a hit! UPDATE: The only chives at local supermarket were $3.00. Since only 1 Tbs goes in the dish, I left them out and put a bit of finely chopped parsley on top for color. No detectable flavor change.

This recipe lives up to all the great reviews. I made this for Christmas and it was a big hit! I ended up using Fontina instead of Gruyere, and light Mayo instead of Canola. It was rich, creamy, and decadent! As mentioned in other reviews, the onions took a lot longer to caramelize, but it was worth the wait! I also doubled the recipe with no problem. I served it with sliced, warm French bread and it was delicious!

This dip went over very well at our small group. I served it with Stacy's multi-grain chips, but only because I didn't get out to the store to get a multi-grain baguette. Very tasty! I was probably more generous with the cheese than what it called for. Additionally, I added just a bit of heat to this with two shakes of red pepper flakes.

This dip is delicious and easy to make. I have made it twice and it is always the first food item to disappear at parties. Actually forgot to buy bacon one time and it was still awesome. Highly recommend.

So delicious I couldn't believe I made it. I don't own a cast iron skillet so I just used my stainless steel one and the onions turned out fine. Definitely will be making this again and again.

I made this for a family dinner celebration and it was a big hit- even my boyfriend, who doesn't care for "stinky cheeses", scarfed this down. There isn't a "too-pungent" taste of Gruyere, but for those with a sensitive palate, Fontina should work beautifully. I used Gualtney low-fat bacon (in the green package) and light cream cheese- yet this does NOT taste "low-fat"! I served it with butter crackers, but any kind would work with this recipe. It's super easy to make. I'm bringing it to a friend's Superbowl party this weekend!

This spread is amazing! It has such a depth of flavour! It requires a bit of time, but not much effort. I recommend it, and I'll definitely be making it again! We made this for Christmas, served with bread and brought a veggie tray alongside. Everyone liked it even better on the fresh veggies than on the bread. Will definitely make this again.

WONDERFUL! The hit of my party. I thought someone was going to try to lick the dish when it was gone! It was that good. A great combo of flavors. This makes a hearty dip which is perfect for a winter party.

Everyone loved this. It took longer to caramelize the onions than in directions - maybe I turned down the heat too much after initial saute. Definitely worth the wait. I might use a smaller pan net time, or divide into a couple of smaller sizes to sit around.

This spread was excellent! Looks delicious, smells delicious, and it is delicious. The only thing I changed was the fat free sour cream and used low fat sour cream, and used low fat mayo. It was gone in no time! This is definitely a crowd pleaser. I will most definitely make this again.

FANTASTIC! I substituted a generous portion of creme fraiche for the sour cream, omitted the mayo, was a little more generous with the gruyere and also added in some shredded parmesan for a little more cheesy goodness. I pan-seared bay scallops and set aside, then sprinkled over the top of the melted pot of spread just before serving. Served with sliced whole grain bakery-fresh bread. Bon appetit!

I made this dip exactly as instructed, and I wouldn't change a single thing (it is rare I say this about any recipe). It's creamy, decadent and satisfying, and there is no need at all to add more cheese or bacon, even if you totally disregard calories. Furthermore its EASY and comes together in a flash. This will be a go-to for me for years to come. I served it with chunks of non-toasted French bread and it was the perfect complement.

Really tasty. The only modification I made was to deglaze the pan with 1 Tbsp of balsamic vinegar after caramelizing the onions. You'd never know it had fat free sour cream and low fat mayo in it! It was a big hit at the party.
